Vegan Healthy High Protein American Pancakes
These pancakes aren't sweet or savory, but pair well with sweet toppings.

Blend oats into flour, unless using oat flour.

Mix chia seeds with 45 g water to make a chia egg and let sit 15 minutes.

Add oat flour, chia egg, soy protein isolate and 50-100 g water to a bowl. Mix into a thick, slightly runny paste.

Heat a pan on medium, spray oil on it, and add about 60 g batter once hot.

Do not add a lid. Turn after about 3 minutes, when the pan side has formed a crust.
