These pancakes are super easy to make. They’re not sweet and not savoury. They blend in with whatever topping you add to them.
I tried them with some homemade nutella, banana and berries, but I also had them as buns for my vegan burger.
One pancake has 73kcal and about 8.4g of protein – pretty good for something that’s supposed to be dessert.
Vegan Healthy High Protein Fluffy Pancakes
These Pancakes aren't sweet or savory. But, you can pair them with something sweet and they taste amazing
Equipment
- 1 Blender/Coffee Grinder (to blend the oats)
Ingredients
- 75 g Oats (Old fashioned, rolled – or oat flour)
- 75 g Soy Protein Isolate
- 15g g Chia Seeds
Instructions
- Blend the oats into a powder to get oat flour (Skip if already using oat flour)
- Mix chia seeds with another 45g water (to make a chia egg) and let it sit for 15 minutes
- To a bowl add the oat flour, chia egg, soy protein isolate and another 50-100g water. Mix until a thick paste is made. It should be only a bit runny (kind-of like a pudding consistency)
- Heat up a pan (on medium), spray some oil on it and add about 60g of the batter onto it once hot
- Do not add a lid, turn in about 3 minutes (when the side connected to the pan has formed some crust)
