These pancakes are super easy to make. They’re not sweet and not savoury. They blend in with whatever topping you add to them.

I tried them with some homemade nutella, banana and berries, but I also had them as buns for my vegan burger.

One pancake has 73kcal and about 8.4g of protein – pretty good for something that’s supposed to be dessert.

  • 1 Blender/Coffee Grinder (to blend the oats)

  • 75 g Oats (Old fashioned, rolled – or oat flour)
  • 75 g Soy Protein Isolate
  • 15g g Chia Seeds

  • Blend the oats into a powder to get oat flour (Skip if already using oat flour)
  • Mix chia seeds with another 45g water (to make a chia egg) and let it sit for 15 minutes
  • To a bowl add the oat flour, chia egg, soy protein isolate and another 50-100g water. Mix until a thick paste is made. It should be only a bit runny (kind-of like a pudding consistency)
  • Heat up a pan (on medium), spray some oil on it and add about 60g of the batter onto it once hot
  • Do not add a lid, turn in about 3 minutes (when the side connected to the pan has formed some crust)
