This is my go to brunch. It’s tasty, it’s healthy and it has pretty good macros.

Also, it’s quite easy and fast to make.

Vegan Healthy Huevoes Rancheros

These huevos rancheros use a tofu scramble to make one of my favorite mexican dishes

Ingredients
  

Tofu Scramble (the "egg" part)

  • 250 g tofu
  • 1 tsp kala namak
  • 1 tsp turmeric
  • 1/2 tsp ground pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • cooking spray

Ranchero Sauce

  • 1 can black beans 400g
  • 1 can corn 200g
  • 1 onion
  • 7 garlic cloves
  • 1 jalapeno pepper
  • 1 jar chunky salsa 230g
  • 1 tbsp taco seasoning
  • 1 tsp olive oil

Topping

  • 1 tsp shredded vegan cheese
  • 1/2 avocado
  • coriander

Instructions
 

Tofu Scramble

  • Heat up a pan and add some cooking spray on it. Once hot, break apart the tofu by hand into small pieces
  • Meanwhile mix the spices in a small bowl until homogenous
  • Once the tofu is a bit brown, spread the spices on all of it and then mix. If the tofu is a bit sticky to the pan add a bit of water to deglaze it
  • Leave it for about 3-5min and then it should be done

Ranchero Sauce

  • Dice the onion, mince the garlic and dice the jalapeno (use the seeds for extra spiciness)
  • Heat up a pan and add the olive oil on it. Once hot, add the diced onion. (You can use a lid going forward – it's easier)
  • After about 5min the onions should be a bit brown and translucent. Add the garlic and the jalapeno
  • After about 1min, drain and wash the black beans and the corn and add them to the pan.
  • After about 3min, add the chunky salsa and a bit of water (about 50ml) and stir until it becomes homogenous
  • Let it cook for another 3-5min or until the water has evaporated and the consistency is not too runny. After this, turn off the stove.

Plating

  • Add half the tofu scramble on one side and half the sauce on the other
  • Top the sauce side with vegan cheese and coriander
  • Add the sliced avocado in the middle and enjoy!

Notes

If you want it to be less caloric skip the vegan cheese and/or the avocado
